I really really really love Asspen, and any episode where Stan or someone else gets in over their head with something they don’t care about. I tend to go for the more silly stuff than the topical humor. Stanley’s Cup is great, 'Lil Crime Solvers, Quest for Ratings, Woodland Critter Christmas, love them all. Basically everything after the third Season is at the very least quite good.
The Imaginationland trilogy has become one of my favorites. They’re releasing that as an uncut direct-to-DVD feature, so I’ll be picking that up.
You know the one where Cartman kills that one boy’s parents and feeds them to him? That one!
Also, the Halloween episode with Korn.

That’s gonna be a must-own.
My favorite is probably a toss up between when Mr. Slave had the whore competition with Paris Hilton and the one last year when Ms. Garrison became a lesbian.
“Scott Tennerman Must Die” I believe it was, and GOD that is hilarious. I think it might have only recently been overtaken for me by the Imaginationland trilogy.
That would be “Scott Tennerman Must Die.” And yes, that was a milestone for the show–simply for just HOW fucked up they were willing to get.
Also, the Sex Ed episode where the boys and the girls go all Road Warrior on us is great. And the one where Cartman gets his own theme park.
And let us not forget The Passion of the Jew.

I hated the 300 parodies, but I loved the scissoring jokes.
I stopped watching South Park somewhere around the time of the “Cartman’s Dad” episode, but for the brief time I was watching, I absolutely loved the “Mecha Streisand” episode.
Other favorites:
*Cartman’s trip to the future to get a Nintendo Wii; ends up caught in a war between devout atheists and sea otters.
*The Apocolypto/Day After Tomorrow episode with the head lice.
*The episode that made me fall in love with the show: Chinpokomon.
*Free Hat. 'Nuff said.
*And, of course, the “Shit” episode.

The 300 stuff was weak, but it’s a testament to that episode that all that sticks with me is the scissoring stuff. Holy hell was that ever funny.

Other favourites are A Ladder To Heaven ("nine-eleven… nine-eleven, nine-eleven, nine-eleveeeeeeeen"
and Good Times With Weapons - if only for the sequence that rips off anime songs. I still sing “Protect my balls!” to this day.

Ah, the dance off, where we learn Butters’ last name is “Scotch”. Also, that he has the deadliest tap dancing moves on the planet. Literally.
I second the Scott Tennerman episode, and especially Trapped in the Closet.
Butters’ last name is Stough, isn’t it (pronounced Stotch).
I’ve never seen it spelled, just remember them saying “And now performing…Leopold Stotch” and then Butters coming on stage. And then laughing my ass off at the ensuing carnage.
What was the name of the one where Butters fakes his death, leading his parents into a Pet Semetary subplot?

I haven’t seen that many episodes but I have to say Time Immigrants has to be up there.
Basically I’m a sucker for anything with Randy it in since he’s so goddamn hilarious.
